Pork Tacos

Happy Monday!
I figured it would be good to start the week off with a yummy recipe.
I mentioned these tacos to you about two weeks ago after Jordan and I had them for dinner.
They have quickly become one of our favorite meals, and very easy to make. You simply stick the pork in the crock pot and let cook all day. All the rest is simply prepping the toppings. 


Ingredients:
  • 1 pork loin
  • 1/2 jar of salsa verde
  • 2 tablespoons lime juice
  • pickled red onions
  • avocado
  • cotija cheese
  • cilantro
  • limes
  • flour torillas


Put the pork loin, half the jar of salsa verde and two tablespoons of lime juice into the crock put on low. It takes about 8 hours for the pork to fully cook.


While the pork cooks, you want to prepare the pickled red onions ahead of time.
To make pickled red onions, you simply need one red onion, 8oz apple cider vinegar, and two tablespoons of sugar.

Slice the onion into thin rings. Bring the apple cider vinegar and sugar to a boil in a small sauce. Lower the heat, add the red onions and cover. Once the onions are cooked, transfer them with the juices into a container with a sealable lid. Put immediately into the fridge to 'shock' the onions. 


After about 6 hours in the crock pot, the pork will look like this:


You will want to shred the pork for the remainder of the cook time. Simply take two knives and criss-cross them along the length of the pork to shred the meat. Let cook for two more hours after shredding.


Next, prepare the remaining ingredients: shred the cheese, slice the avocado and limes, and wash the cilantro.



After the pork has finished cooking and all the toppings are prepped, pop the tortillas in the microwave for about a minute to warm them up and you are ready to eat.



These are such an easy recipe to follow.
I love how simple and clean the ingredients are.

100,000!!

Simple Kind of Life just hit 100,000 total page views!



It's crazy to think that a year ago this time I had probably 20 page views.
I started the blog April of 2010, but didn't start actively posting until around November.
I don't think I even shared it with anyone until well into 2011.

This blog has grown tremendously in the past year and I owe it all to you guys.
Thank you so much for your dedication and interest in my silly little crafts.
You are inspiring me to keep going and doing more!

Laundry Room Art

Remember my $3.00 laundry room wall art? 
Made from frames I scored for free and three prints from Goodeals that cost $1.00 each.

Well last weekend I hung the frames up in the laundry room.

Here is how the laundry had been looking since installing the shelf back in March.

And here's the laundry room after I hung the photos.


It wasn't until after hanging the pictures that I realized one of the frames is slightly smaller than the other. Talk about a womp womp moment. I don't think it's too terribly noticeable, and even less so in person. 

Regardless, I'm loving how the art looks on the wall. Notice I only hung two of the three framed pieces. I haven't decided if I want to hang the third in the laundry room or somewhere else. (I'll keep you posted on that.)

I do have more that I hope to do in this room as part of my Fall to-do list. I thought about repainting the room, but I'm not sure how easy it will be to move the washer and dryer, and I don't want to just paint around them. 

I've looked around for a fun rug for this room, but because of the awkward shape and size of space, I haven't had much luck. The long runner rug that is there now (you can see a little bit of it in the first photo) is a perfect fit for the piece of floor in front if the appliances. I honestly can't even remember where I bought it, so I am thinking of keeping that rug and repurposing it somehow. 

Whether I paint some sort of pattern like this chevron DIY rug,


or maybe pick a quote or 'laundry' related words and paint them on the rug like this one:

In addition to the rug upgrade need to mount the ironing board on the wall and possibly find a new cover for it. I would also like to add some better organization to the room, and paint the wooden accordion hooks on the right wall.

But for now, every time I toss some laundry in the laundry room I'm pretty happy with the mini upgrade so far. Best part is the $3.00 price tag!
